Midori Spring (ECO) Organic Japanese Matcha - Culinary Grade Green Tea Powder for Cooking and Baking - Kosher, Vegan Certified (100g)

This tea powder is potent and with so many applications the possibilities are endless. I decided to get this to drink it but when I saw the suggestions on the package I was simply amazed. I want to make homemade green tea mochi and french macaroons. Out of the bag it tastes good. It's really good quality since it's made with Tencha and not Sencha leaves. If you don't know the difference Tencha is the only thing that qualifies as true Matcha in japan. Sencha is usually marketed in the US as Matcha but it's not. The tea trees are coated in fabric to guard the leaves from light throughout the several week period before harvest. This method forces the plant to provide a lot of chlorophyll, will increase the assembly of amino acids and offers the leaves a really dark, wealthy shade of green. The leaves are then finely selected and arranged flat to dry (if they were rolled, they'd become Gyokuru tea). At this time, the leaves are de-veined, de-stemmed and finely ground into a powder that is then referred to as “tencha.” Sencha isn't treated as specially and therefor is lower quality tea.
